That stands for Thank Goodness it’s Finally Friday.
Because this week has felt like the longest short week in the existence of short weeks. I guess three trials, a late night, and a few headaches would do that. It’s a great thing that I love what I do 😉
As far as this weekend goes, I’m excited for sleep, and to catch up with coworkers and a friend who’s in town. But first here are some of what’s been happening in my life, aside from work.
I experienced my first thundersnow, which is apparently a thing here in Chiberia, on Monday. I’ve got to admit it was pretty cool but I was very happy I didn’t have to commute in it.
I realized I’ve never shared this Target buy with you. Bet you wouldn’t guess I got it for a whopping $1. Best. Find. Ever. Now my work papers are organized AND stylish in my bag.
I’ve been working on my fitness and my sore body lets me know it’s working. Few things feel better than a great workout.
Tim and I are also still eating paleo. While we have our cheats, I much more than he does, we’ve been pretty good about it. Whenever I crave junk food, I try to satisfy my sweet tooth with a banana smoothie of some sort.

Ahead of the [Wedding Planning] Game
{Mostly} Paleo Chocolate Chunk Cookies
Family was supposed to visit me last weekend so I’d planned to bake them Valentine’s Day cookies. Due to the NY snowstorm they had to reschedule their visit. I decided to bake myself some cookies, anyway, which I really enjoyed. And I figured I’d share the recipe in case I have any readers who eat paleo.
Consider these my Day After V-Day (mostly paleo) treat. I don’t measure ingredients when cooking but you’ll want to add in and mix until you get a pretty thick consistency.
Ingredients:
– Almond Flour
– 2 eggs
– Water
– 100% cocoa chunks
– Drops of virgin olive oil on cooking pan
– Frosting (the not-so-paleo ingredient)
*Be sure to wait until the cookies are cool to apply the frosting so as to avoid photo #5
Bake for 10 minutes and voila!
