This past weekend at home consisted of a lot of really-not-clean, bad (or good, depending on how one sees it) eating. So I’m back on my healthy train. Instead of adopting a “paleo” lifestyle, Tim and I are eating clean. But to be honest, many of my inspirations are paleo.
I’ve been asked about some of my {mostly} paleo recipes. Because I don’t exactly follow recipes, I come up with my own and usually do not measure the ingredients. Generally speaking, though, these recipes are all pretty easy to personalize to your own liking.
1. Avocado Egg Salad
Ingredients: 1 egg + 1 avocado + vinegar + garlic + optional baked or grilled chicken (optional)
Directions: Boil egg; smash avocado and boiled egg; add in vinegar and garlic; add a side of baked or grilled chicken to make it a lunch or dinner meal
2. National Chocolate Mousse Day Treat
Ingredients: 95% cocoa bar + almond milk + 5 marshmallows + vanilla extract (optional)
Directions: Bring milk to a boil; add in 4-6 bars of the cocoa; add in the marshmallows; add vanilla extract; boil for 10 minutes; chill in freezer for 10-15 minutes
3. Vanilla Almond Spring Cookies
Ingredients: Almond flour + 1 egg; water + vanilla extract + l vanilla frosting + sprinkles
Directions: Add egg to ~1 cup almond flour; add enough water to keep the mix consistency a bit thick; add a few drops of vanilla extract; Bake at 350 degrees for 10-12 minutes; let cool; apply vanilla frosting and sprinkles.
